1 Hot Dishes
1.1 Mary Jane's Veal Stroganoff
- 1 1/2 lbs veal in 1-4 inch stripes
- Juice of one lemon
- 4 tbs. butter
- 1 onion chopped fine
- 1 cup sliced mushroom
- 1 tsp. salt
- dash of pepper
- 1 cup sour cream
- flour
- stuffed olives
Cover veal with lemon juice. melt 2 tbs. butter in large heavy skillet. Add onion and mushroom, cook for about 5 minutes or until onion is golden. Remove onion and mushroom from pan. Toss veal in enough flour to cover it on all sides. Stir 2 tbs. butter into skillet. When it bubbles add the veal, salt and pepper. Cook quickly until veal is a lovely, rich brown. Turn down heat, add onions and mushroom. Stir in sour cream and heat slowly. Garnish with stuffed olives. A fine, tasty meal along with string beans and broiled tomatoes. Serves 4.
